Gastronomical experiences of Svachovka
The story of a rare whisky from Svachovka is still being written and we are not even close to the end yet. We used to go to Scotland to gain experience, and we prepare the mash according to the exact recipe in our GLOKNER brewery. Technologically, we maintain the Scottish way of production – a two-round distillation system. The whisky maturation barrels used at Svachovka were originally used for Jack Daniels in Tennessee, but also for sherry and port wine. The cellar is connected to an old well. It has been preserved since the turn of the 18th and 19th century and has amazing natural humidity. That’s where our whisky matures. It can be boldly described as craft.
Under the name of Svachova přírodní apatyka (Svach’s natural apothecary), we produce exclusive liqueurs – without any added artificial flavours, dyes and sugars, with all the care of handpicked and sorted fruits, and cold macerated to preserve beneficial vitamins and substances.
You can taste spirits during the tour of the distillery. The tour starts from the place where fruit is received, and you will see it processed and stored in fermentation vessels. After this comes the distillation column. The tour ends with the sampling of a brandy that is currently being made, along with a professional explanation in the tasting room in the distillery building. The duration is about 30-40 min depending on the number of questions, and the price of the tour is 100 CZK / person. The tour may also include two samplings of fruit distillates and beer/whisky, along with degustation of our home-smoked meat with malt bread and a get-together in the tasting room. The duration of this tour is approximately 45-60 minutes, price 250 CZK / person.
Glokner Brewery. The brewery was established in 2013. The name Glokner is derived from the bell tower, in which a bell with the same name hangs. The technology of the brewery and the interior has been designed in an industrial style. The space where the beer matures is interesting, because it is located on the first floor. On the contrary, shredding takes place above the brewery and malt scrap falls by virtue of gravity directly into the boiler. Another interesting technological thing is the supply of beer directly to the bar. The length of the entire beer pipeline is about 50 meters.
